This vegan probiotic cacao pudding is packed with fiber, heart-healthy fats, and more potassium than a banana, it’s good for you & will delight your taste buds.

Ingredients:


  • 1 avocado (approx 2/3 cup of mashed flesh)

  • 1 container (4 oz.) of plain coconut yogurt (vanilla will work too)

  • 1 Tablespoon coconut milk

  • 2 Tablespoons raw cacao powder

  • 1 Tablespoon of Tiger Nut flour

  • 3 teaspoons of alcohol free vanilla

  • 1/4 teaspoon Real Salt

  • 2 Tablespoons of Monk Fruit/Allulose* powder (or you can just use double the maple syrup if you don’t have it, or don’t want to use the sugar alternative)

  • 2 Tablespoons of maple syrup


*Some sensitive individuals may get GI upset from Allulose, so if you have a sensitive GI system, replace with plain monk fruit or more maple syrup, or use an alternative that you know you can tolerate. This is a small amount of Allulose and should not cause any GI upset for most.


Optional - toppings:

  • Whipped coconut cream (Trader Joes has one, or look in the freezer section of your health food store).

  • Dark chocolate shavings or mini chips

  • Raw cacao chips

  • Finely chopped nuts

  • Shredded coconut


Directions:

  1. Put everything into a food processor.

  2. Process until smooth.

  3. Taste and adjust for sweetness, saltiness.

  4. Put into small ramekins.

  5. Cover and put into refrigerator for at least 2 hours.

  6. Serve with a dollop of coconut whipped cream (optional - but amazing).
