Anti-aging Blueberry Smoothie

Wild blueberries are not only delicious, they are nutritious and have powerful anti-aging benefits.

Rich in fiber, minerals, and the vitamins A, C, E & K, fresh blueberries are lower on the glycemic index than many fruits, and also offer a good dose of fiber — both of which are helpful in managing blood sugar.

A cup of blueberries has about 80 calories, 4 grams of fiber, and about 25% of the RDA of vitamin C. When given the choice between wild or cultivated berries, choose the wild. Despite being smaller than the cultivated kind, they contain more anthocyanins (which are powerful for our immune system and anti-aging), and they also have a deeper, more intense taste.

Ingredients:

  • 1 cup of plant based milk (such as Ripple or coconut milk) - or you can use water, or coconut water

  • 1-2 tablespoons of chia seeds

  • 1/2 scoop of greens powder (such as Vitamineral Greens, or a handful of baby spinach)

  • 1 teaspoon of organic virgin coconut oil (or MCT oil)

  • 1 scoop of plant based protein (such as Warrior Blend)

  • 1/2 cup of frozen wild organic blueberries

  • a pinch of high quality salt like Real Salt (just a pinch brings out flavors and sweetness - too much makes it salty)

  • 1/3 of a frozen banana* -optional, see below

  • ice as desired

*Choose bananas that still have a little green in the stem, and before they have brown spots - this means they are naturally lower in sugar and higher in resistance starch - a beneficial prebiotic fiber.

Directions:

  1. Put the chia seeds into the liquid, allow to soak for 2-3 minutes.

  2. Put everything else into blender - blend to combine.

  3. Add ice as desired to thicken, blend.

  4. Pour and enjoy!
