Turmeric is known for it's bright yellow color, and it's powerful anti-inflammatory benefits. The active ingredient in turmeric is called Curcumin, and it known to lower inflammation, black pepper makes it more bioavailable - so make sure to add some pepper.
This dressing is a creamy and delicious way to boost your salad with the beautiful color and nutritional benefits of turmeric.
Plus, the hemp hearts add in protein, and healthy fats, and the apple cider vinegar benefits digestion, and the organic juice provides vitamin C!
Ingredients:
1/2 cup fresh squeezed organic juice (can use lemon if preferred, but I prefer orange)
1/3 cup raw cashews (soaked for at least 20 mins, and drained)
1/4 cup hemp hearts
1/4 cup filtered water
3 Tablespoons of raw apple cider vinegar
4 Tablespoons of olive oil or avocado oil
1/2 tsp. turmeric powder
3/4 tsp Real salt (or to taste)
1/8 tsp garlic powder, or 1 clove fresh
Fresh cracked black pepper to taste
Directions:
Cover the cashews with water, allow to soak for at least 20 mins, up to 4 hours. Drain soaking water.
Squeeze the juice from the oranges
Add all the ingredients to the blender, blend to combine well. Taste & adjust.
Pour into a glass jar and store in refrigerator until ready to serve.
Great on salads, roasted veggies, etc! If you want to make this thicker, more like a dip - use slightly less water, and make a day ahead, it thickens in the refrigerator.
