Cilantro Dressing
I used to like to grab a salad at a local healthy food grocery store near me - one of my favorite things was the cilantro dressing they made in house, I used to literally crave it. Then one day, they replaced all their homemade dressings with commercially made dressings - including the cilantro one. I was so bummed!!
But then I decided - why not make my own? I might even go so far as to say this is even better than theirs!
This dressing is not only delicious, but it is very cleansing and detoxifying. Cilantro is wonderful for removing heavy metals, pumpkin seeds are anti-parasitic, and hemp hearts balance hormones.
This dressing is great on salads, bowls, and even would be an amazing marinade, or topping for grilled steaks or chicken. So easy to whip up in your food processor or blender. Give it a try!!
Ingredients:
2 cups of organic cilantro leaves (rinsed and dried), about one bunch.
1/4 cup pumpkin seeds (I used sprouted pumpkin seeds)
2 Tablespoons of hemp hearts
1/3 cup of avocado oil
1/3 cup of fresh lime juice (lemon juice will work too)
1 Tablespoon of raw apple cider vinegar
1 teaspoon of salt (I like Real Salt brand)
2 teaspoons of local organic honey
fresh cracked pepper to taste
1-2 Tablespoons of filtered water (depending on how thick/thin you want it)
Optional - red pepper flakes to taste, or 1/3 of a raw jalapeño (seeds removed)
Directions:
Rinse and drain/gently dry the cilantro, remove the leaves from the stems.
Put all the ingredients (except the water) into a food processor (or blender), blend to combine.
Add 1- 2 Tablespoons of water if you want to thin it out.
Taste & adjust seasonings.
Pour into glass container & store in fridge for up to 4 days.
