Samoa Cookies
These delicious and easy cookies are vegan, free of gluten, dairy, nuts, grains, & refined sugars. They require no baking at all.

Ingredients:
10 medjoul dates, soak in hot water.
3 tablespoons of the water the dates soaked in
1.5 cups of shredded coconut (unsweetened)
1.5 cups of tiger nut flour* (could sub blanched almond flour if desired)
1/8 tsp. salt
1/2 tsp of alcohol-free vanilla
1 tablespoon of virgin coconut oil
Topping:
1/2 cup coconut (optional - lightly toasted) for rolling balls in before pressing
1/2 cup dark choc chips (I use Enjoy Life brand)
1 tsp. coconut oil.
*tiger nut flour is a grain-free, nut-free flour which is a resistant starch (a prebiotic and supports metabolism, energy & digestion). I use Organic Gemini’s brand. Learn about resistant starch, which supports a healthy microbiome, so it is sometimes called the "Skinny Starch." Directions:
Soak the dates in hot water for 10 mins.
Remove the pits & put the dates into food processor with the rest of the cookie ingredients, and 3 tablespoons of the soaking water/liquid.
Process, scraping down sides several times. It should come together into a ball. If it doesn’t, add a 1/2 tsp more of the soaking liquid or so until it does.
scoop out teaspoons of the dough, roll into a small ball and roll into extra coconut coating both sides of the cookie in the shredded coconut.
press the balls flat
place cookies on a small sheet pan lined with parchment (I line them up close, makes the chocolate drizzle easier)
at this stage, put into freezer for 10 mins.
melt the chocolate chips (I put them in a glass dish in toaster oven for 3 mins).
when chocolate chips are melted, add the coconut oil. Stir together.
remove cookies from freezer, drizzle chocolate on top.
return to freezer to set. 10 mins is plenty.
ready to eat!
I store them In freezer.
