Samoa Cookies

These delicious and easy cookies are vegan, free of gluten, dairy, nuts, grains, & refined sugars. They require no baking at all. Ingredients: 10 medjoul dates, soak in hot water. 3 tablespoons of the water the dates soaked in 1.5 cups of shredded coconut (unsweetened) 1.5 cups of tiger nut flour* (could sub blanched almond flour if desired) 1/8 tsp. salt 1/2 tsp of alcohol-free vanilla 1 tablespoon of virgin coconut oil Topping: 1/2 cup coconut (optional - lightly toasted) for rolling balls in before pressing 1/2 cup dark choc chips (I use Enjoy Life brand) 1 tsp. coconut oil. *tiger nut flour is a grain-free, nut-free flour which is a resistant starch (a prebiotic and supports metabolism,
